Observed on April 27, National Prime Rib Day is a day to celebrate the deliciousness of beef.
The prime rib or standing rib roast contains the eye of the rib and is well marbled with fatty muscle known as the lip or cap. Often roasted standing up with the ribs stacked up vertically, the meat is rubbed with salt and seasonings before being slow roasted with dry heat.
Many prefer to apply smoke to the uncooked rib roast at a low heat for two to three hours before dry roasting.
In the U.K. and Canada, prime rib is sometimes served with Yorkshire pudding, an unsweetened bread popover that is used for mopping up gravy that typically accompanies traditional roast beef dinners.
