Everything about April 11 is a little cheesy but that’s okay because it’s National Cheese Fondue Day, a day when fromage lovers pull out their sticks and jab morsels of meat, vegetables or bread into pots of warmed drippy cheese.
Cheese fondue originated in Switzerland in the early 1900s, it’s believed, as a peasant meal that used up leftovers. While some purists believe Swiss cheeses such as Gruyere and Emmental make the best fondues, many different cheeses can create a delicious fondue.
Throw in spices, herbs, cream, wine and other liquors and your flavor profile gets even more complex and savory.
